No buffets here. Food is freshly prepared to order, while kitchen scraps and coffee grounds are composted, adding 10–15 kg of organic waste weekly.
We work with Mauritian farmers, fishermen, makers and artisans, bringing local flavours and craftsmanship into every stay.
Rooms and public areas use water-saving technology and efficient laundry systems. We also collect rainwater for use around the hotel.
From refillable bathroom amenities to biodegradable cleaning products, we favour alternatives that help reduce unnecessary waste.
From bread to syrups and sauces, much of what our guests taste here is made on-site. They can even join our workshops and learn to make them!
LED lighting helps reduce energy consumption across the hotel. Small, everyday choices that contribute to a more considered way of operating.
Organic waste is composted to nourish the gardens, while seaweed collected from the beach is shared with local planters for composting.
SALT of Palmar is an adults-only boutique hotel in Mauritius for curious couples and solo travellers who want to experience more of the island. Sustainability is part of the everyday, from sourcing from local farmers, fishermen, makers and artisans to reducing food waste and single-use plastics. Skill Swaps and locally rooted experiences bring guests closer to Mauritian people and culture, while thoughtful design, great food and a genuine sense of place offer a different take on luxury.
SALT of Palmar puts Mauritius at the heart of the stay. Local ingredients find their way onto the plate, Mauritian makers and crafts are part of the hotel, and Skill Swaps and locally curated experiences introduce guests to people with stories, skills and knowledge to share. SALT of Palmar isn’t a place to retreat from the destination, but a base for getting to know it - its people, flavours, traditions and everyday life.
At SALT of Palmar, the focus is on using less single-use plastic and finding better alternatives. Refillable shampoo containers, NORDAQ water, aluminium bottles in selected rooms and as gifts, cornstarch shower caps, amenities packaged in biodegradable limestone paper, wooden key cards, Kilner jars and biodegradable straws all play a part. Together, these choices help SALT of Palmar save 50,000 plastic bottles every year.
For SALT of Palmar, reducing waste starts in the kitchen. There is no buffet; food is prepared to order, helping the team better manage what is prepared and what gets left behind. Vegetable scraps, fruit peels, coffee grounds and garden waste are also composted, with around 10 -15 kg of organic waste added to the hotel’s compost each week.
At SALT of Palmar, it comes down to practical choices made every day. LED lighting helps reduce energy consumption, biodegradable cleaning products are used around the hotel, organic waste is turned into compost for the gardens, and rainwater is harvested for use around the property to reduce reliance on freshwater. Add local sourcing, less single-use plastic and less food waste, and it’s an approach built on doing more with less.
SALT of Palmar takes inspiration from a simple idea at the heart of regenerative tourism: tourism should have a positive relationship with the place it calls home. One small example starts right on the beach. Seaweed collected from SALT of Palmar is shared with local planters in Belle Mare, who reuse it for composting - giving a natural material a second purpose while supporting local agriculture. Alongside local sourcing, Skill Swaps and experiences with Mauritians, it’s part of SALT’s approach to keeping tourism connected to the people and place around it.
